Trail Mix Bites

 1/2 cup peanut butter
 3/4 cup dried fruit and nut trail mix
 1 cup old-fashioned oats
 1/4 cup honey
 1 tsp vanilla extract
 2 tbsp ground flaxseed or flax meal, optional

1. Mix all ingredients in a medium bowl until combined, using a sturdy spoon. Add more honey if the mixture is too dry, or more oats if the mixture is too wet.

2. Roll into balls about 1-inch across. Store in an air-tight container in the refrigerator for up to 7 days.
