1. In a small bowl, whisk together oil, balsamic vinegar, mustard, and basil, thyme, or Italian seasoning. Set aside.
2. In a large bowl, add the potatoes and green beans. Pour the dressing over the vegetables and toss until coated.
3. Taste and season with salt and black pepper as desired.
4. Refrigerate until ready to serve.
